Head Chef Keir Ballantyne and his team are looking forward to the anticipated arrival of Chef Dave Verheul for the Guest Chef Series. Hailing from the renowned Embla in Melbourne, Chef Dave’s cooking showcases small plates of wood-fired and fermented delicacies.

With a loyal local following and widespread critical acclaim, Verheul’s culinary journey includes the likes of the Matterhorn in his native New Zealand, the opening of The Town Mouse in Melbourne in 2013, followed by the highly anticipated Embla in 2015. Additionally, Verheul started Saison Aperitifs in 2020, specializing in high-end seasonal vermouth and amari, which was voted the best vermouth in Australia in 2021.

Firmly established as a leading chef and winemaker within the Australian culinary world, Verheul’s approach celebrates the integrity of produce with a distinctive style characterized by thought, detail, balance, and purity of flavor.
